Cooking with Scallops
Scallops are a great delicacy, and in fact some of the best scallops
in the world come from British waters.

Remember that both King scallops and Queen scallops cook very quickly. The roes only take a matter of seconds to cook, so they are usually added to the pan shortly before serving. Do not overcook scallops or they will become rubbery.

Scallops have an essentially subtle flavour, so be careful not to hide this by using a strong sauce e.g. a cheddar cheese sauce. Mushrooms, Jerusalem artichokes, bacon, parmesan cheese all enhance the taste of scallops. Buttered breadcrumbs provide a crunchy contrast of texture.
